By peeling the skin of chickpeas, we can achieve that silky-smooth texture which could be a tedious process so for this, a simple trick of using baking soda works best.

Ingredients
- Dried Chickpeas: 1 cup
- Garlic: 2-3 gloves
- Lemon Juice Freshly Squeezed: ¼ cup
- Tahini Sauce: 1 cup
- Cumin: ½ tsp
- Extra Virgin Olive oil: ¼ cup
- Baking soda: 2 tsp
- Paprika: ¼ tsp
- Salt: 1 tsp
- Coriander leaves or Parsley leaves for garnishing
Instructions
Soak chickpeas overnight
- Cook chickpeas with baking soda until tender.
- Drain and place them in cold water
- Five minutes later gently rub with your fingers, this helps in removing their skins easily, leading us towards silky-smooth
- Using either a Food processor or a blender grind the chickpeas, lemon juice, tahini sauce, cumin, salt and oil. Process for five minutes until Smooth and creamy.
- Taste the mixture and add more salt, lemon juice, or garlic to taste. Process again to blend all ingredients well. If the texture seems too thick, add little water and continue to process until desired consistency is reached.
- Transfer mixture to a serving dish and drizzle with olive oil and Paprika.
- Garnish with Coriander or Parsley leaves and Serve Hummus with pita, crackers, or fresh vegetables for dipping.
Recipe Notes
Tips: You can use a canned chickpea with rest of the ingredients (omit baking soda) and grind them into smooth paste. But the texture will be little grainy. In this recipe I used homemade Tahini sauce, but you can use store-bought too.
