Chicken fried rice is the most popular Chinese takeout entrée. I love to make this quick dinner that satisfies everybody in our family because it is tasty.
This chicken fried rice is our favorite go-to meal since it is a healthier alternative to takeout. Fried rice is a versatile one-pot dish with eggs, rice, veggies. Moreover, it works better with leftover rice.
Chicken Fried Rice

Ingredients
- 1 lb chicken breast leftover also works
- 2 carrots pre-cut matchstick carrots also works
- 1⁄2 cup peas frozen
- 3 spring onion fine cut
- 1 tsp garlic finely chopped
- 1 tsp ginger finely chopped
- 2 eggs
- 3 tbsp oil
- 3 tbsp soy sauce
- 1 tsp salt
- 1⁄4 tsp pepper chili sauce /sriracha optional
Instructions
- Cook rice and cool it before adding to vegetables. Leftover rice works great. Any variety of rice will be okay.
- Add oil in wok or pan and add garlic and ginger. Allow it to become fragrant and then add chicken breast. Cook chicken and keep aside. Add little oil to same pan and saute vegetables on high flame until the veggies are crunchy.
- Move veggies to side and add one additional tablespoon of cooking oil to the pan in the center, then pour in the whisked eggs. Cook the eggs for 1-2 minutes, scrambling, until cooked, then stir to mix them into the other ingredients in the pan.
- Add soy sauce and flavor with pepper powder or sriracha. Finally, add the chicken and rice. Gently mix it. Garnish with spring onions and serve it.
Recipe Notes
- Cool fresh cooked rice on a plate and completely before adding to other ingredients. Hot rice will turn mushy if mixed without cooling.
- Any vegetable, shrimp, or meat of your choice will work for this fried rice.
