Instant Mango Modak ([Indian dumpling][1]) is a healthy dessert with just three ingredients. If you are time pressed then try this easy Modak recipe for this [Ganesh Chaturti][2]. This Modaks specialty is there is no cooking or baking involved. It can be easily made with 5 minutes. It is also low carb and vegan dessert.
I enjoy mangoes all through their season and during off season I use mango pulp from the can. This Mango Modak was a result of my kitchen experiments. I made it with fine shredded sweetened dried coconut, almond flour and mango pulp.
I fine shred sweetened coconut flakes in blender/mixer . In a mixing bowl add a cup of [sweetened coconut shreds][3] and half cup of [almond flour][4] and half cup of [mango pulp][5] from can and mix it with spatula. Make modak with [modak mold][6] or make balls with hands. Mango modak is ready to eat right away. Refrigerate the modak in fridge to become firm if necessary. If you prefer less sweet then go for unsweetened coconut flakes. This stores well in fridge for 5 days.

Ingredients
- 1 cups fine sweetened shredded coconut Pulse it in food processor to obtain a fine coconut powder. Use unsweetened coconut if you prefer less sweetness.
- 1⁄2 cup almond flour
- 1⁄2 cup mango pulp I used can
Instructions
- In a large bowl mix 1 cup of fine sweetened coconut shreds and 1⁄2 cup of almond flour with 1⁄2 cup of mango pulp. Shred the sweetened flakes before measuring. If you prefer less sweetness then go for unsweetened coconut flakes.
- Mix them to form a dough. Shape them in to modak shape with modak mold or make balls with hands and decorate with kesar(optional). Refrigerate the modak to become firm if necessary.The mango modak is ready to serve. It stores in fridge for 5 days.
