As Diwali is just around the corner, try this Instant-pot Almond/Badam Katli which is made using almond flour and it just takes less than 15 minutes to prepare. Its a perfect sweet to share with family and friends.
Its a gluten free sweet and to make it Vegan, use Vegan butter or you can totally skip the ghee.
What is Katli?
Katli is similar to fudge which is more drier, thinner and made with nuts powder and sugar syrup.
The most common Katli is [Cashew katli/Cashew Fudge][1]
We can flavor this Almond Katli with – Saffron, or Cardamom powder.

Absolutely Yes, Just have to soak the almonds first, remove the skin and then pulse them in a blender/food processor to get the flour.

Instant-Pot Almond/Badam katli
Instant-pot Almond/badam katli is an easy and made with Almond flour. Its a gluten free and Can be made as Vegan too by substituting clarified butter with vegan butter.

Ingredients
- 1 Cup Almond Flour
- 1⁄2 Cup Sugar
- 1 Tablespoons Ghee(Clarified Butter) coconut oil/vegan butter (vegan)
- 1 Pinch Saffron
- 4 Tablespoons Water
Instructions
- Add Sugar, Ghee, Saffron strands and Water into the instant pot and mix well.
- Close the lid ,Venting to sealing mode and set to Manual/Pressure Cook for 4 minutes make sure its in low pressure settings.
- Do a QR(Quick Release) and then keep on saute mode and add Almond flour to the sugar syrup and mix it well without any lumps and cook for around 2 minutes. when the mixture starts leaving the sides, then its ready.
- Now transfer the mixture onto a parchment paper.
- Let it cool for 5 minutes and then place another parchment paper on top and roll with rolling pin. The thickness should be around 1⁄8 -1⁄4 th inch.
- Cut into diamonds and Let it dry completely and store in air tight container.
Recipe Notes
If Almond Katli turns out to be dry add a teaspoon of milk (room temperature) to it and knead the dough well. Roll it thin and cut the katli.
