Cilantro lime rice is a tasty and a quick recipe. This simple rice dish brings out the aroma of cilantro and tanginess of lime/lemon with the richness of butter. I truly fell in love with this rice dish when I first tasted it in Chipotle.
My kids were never a great fan of the usual lemon rice I make at home. But to my surprise, they liked this cilantro lime rice recipe. From then on, its my familys go to recipe.
Preparation
All you need is to cook rice with butter and bay leaf. Let it cool for some time. Squeeze in the lime/lemon juice with chopped cilantro. Mix and serve.
You can cook rice with vegetable or chicken broth for enhanced taste. However, cooking rice with water and butter alone will also be tasty. As a matter of fact, using fresh lime or lemon will be equally good.
This flavored rice recipe pairs well with chicken, fish or vegetarian options. Moreover, I like to add some beans or peas while cooking rice.
My family loves to have the rice with spicy baked chicken or baked cornish hens with chips and pico de gallo a classic Mexican dip. The tangy and flavor of lime and cilantro rice goes well with spicy chicken or fish.

CILANTRO LIME RICE RECIPE

Ingredients
- 1 cup rice Basmati/long grain
- 2 tbsp butter
- 4 tsp cilantro finely chopped
- 1-2 lime/lemon juice
- 2 bay leaf
- salt to taste
Instructions
- Cook rice with butter and bay leaf. Use 2 cups water for 1 cup of rice. Let the rice cool a bit.
- Squeeze in the lime/lemon juice and add cilantro to rice. Add salt and adjust tanginess to taste. Mix well and serve was side dish.
Recipe Notes
- White pepper powder or chili sauce can be added optionally if you prefer spice.
- Cooked bean or peas can be added for variation.
- Leftover rice can also be used.
