Almond Squares are rich, nutty, soft and chewy dessert. The Taste is similar to Almond Fudge. These squares are the perfect recipe to make for the holidays or anytime! It will be a great return gift to your guests.

They stay fresh in the refrigerator for 10-12 days.
This is a very easy recipe and takes 15 minutes, if you have Paneer and Almond flour ready.
You can use blanched [Almond flour][1] and store-bought paneer for a quicker version.

Ingredients
- 1 Cup Paneer tightly packed
- 1 Tin Sweetened condensed milk (14oz) 1 Cup Almond Flour
- 1⁄2 Cup Milk powder
- 3 Tbsp Clarified butter(Ghee)
- 4 Tbsp Butter <
For garnishing
- 4 tsp chia seeds
- 1 tsp Cardamom seeds
- 2 tsp Almond flakes optional
Instructions
Blanching the Almonds and making flour
Take 2 cups of water.
When the water starts to boil add 1cup of Almonds and Switch off the stove. leave the almonds for 2 minutes.
Strain the almonds and place in cold water this helps in peeling the Almond skins easily.
Dry the almonds and Grind to a fine coarse powder.
To Make Paneer
In a heavy-bottomed pan, Bring 4 cups of whole milk to boil.
Add lemon juice, this will curdle milk if it does not then add another spoon of lemon juice.
Now strain the milk solids and whey through a strainer.
Wash the milk solids in cold water and strain it again to remove the smell and taste of lemon juice.
Chia seed and Cardamom powder for garnishing
Grind chia seeds along with cardamom seeds and keep aside.
To make Almond Squares:
In a heavy bottom pan, on medium-low heat add all the ingredients except Clarified butter(Ghee) and keep stirring.
Add Clarified butter(Ghee) in between till it thickens really well and does not stick to the sides.
Pour the mixture on a greased plate.
You can use a butter paper to smoothen the layer and sprinkle with chia seeds and cardamom mixture.
Top with almond flakes and cut into squares after it reaches room temperature.
