Ingredients
- 2 cup almond flour Costcos Blanched almond flour
- 6 tbsp softened butter
- 6 tbsp powdered sugar maple syrup/swerve
- 1⁄4 tsp salt
- 1 tsp vanilla/almond extract
Instructions
- In a mixing bowl add all ingredients and mix with hands to form a soft dough.
- Preheat oven to 350°F . Make small balls and place on parchment lined baking sheet. Slightly flatten each ball.
- Use a fork to make cross hatch pattern.
- Bake the shortbread cookies for 10-13 minutes till it turns light golden brown on top. Time varies depending on flour and oven.
- Cookies are very fragile when they come out of the oven, so give them cooling time for about ten minutes.
Recipe Notes
- If you want to bring out the almond flavor, add 1 tsp almond extract along with vanilla extract.
- Sliced almonds can be added to dough for variation.
- Store in air-tight container to maintain crispness.
